Paul Pitchford, MS

Paul apprenticed with masters of Traditional Chinese medicine, nutrition, and Tai Chi and Zen meditation. His landmark book, Healing with Whole Foods: Asian Traditions and Modern Nutrition, forms the foundation of his dietary teachings. His work has become a primary force behind the whole foods movement today.  He teaches with grace and intuition combining the wisdom of ancient Asian traditions and modern nutrition. He discusses the benefits of plant-based diets, probiotics and cleansing, the importance of maintaining adrenal and thyroid health and explores the causes and solutions for stress.

Course Description

In this presentation, the foundations of dietary and lifestyle healing will be discussed.

On Day 1, we will learn that the legendary Asian models of nutrition and lifestyle support some of the finest   recent research on food and eating: fresh, local foods, organic farming, wise teachings on the various flavors of food—which inform us of their actions in the body, plant-based diets and their remarkable therapeutic value, and the recent glyconutrient studies which indicate the benefit of using whole, unrefined foods to support immunity and overcome degenerations such as heart disease, cancer, and arthritis.

On Day 2, we will discover key food and nutritional practices, teachings, and diagnostic methods, in order to provide the essential elements that support healing, vitality and peace.  A central feature of this workshop will be a “clinical theatre” session with a client, in which Paul Pitchford will demonstrate the diagnosis and corresponding recommendations for the client. The set of client intake assessment forms will also be made available. These forms can greatly simplify an integrative health consultation for your clients.

Learning Objectives:

To increase knowledge of remedies for major syndromes found in Western peoples—damp excesses, liver stagnation, and the yin depletion and stress patterns. To understand seasonal food patterns and good eating habits, and how it impacts health. To learn why heightened awareness improves healing response. To gain understanding of how to secure dietary compliance for ourselves and our clients—our greatest nutritional challenge. To understand the correlation between Traditional Chinese Medicine, syndrome patterns, and whole food remedies.

Who should attend?

This seminar is intended to provide an exciting learning opportunity for MD’s, DO’s, L.Ac’s and other healthcare practitioners and students of acupuncture.  The seminar will be of interest to practitioners, nutritionists, and dieticians who are interested in how food affects health.

Prerequisite:

Healing with Whole Foods is the fantastic book that serves as the prerequisite to the class.  It can be purchased through GAMA for $35 plus a shipping and handling charge of $5 per book.  If you are in the Atlanta area, the book can be picked up at Metro Acupuncture for $35 (payable by cash or check only).

Accreditation

This activity has been planned and implemented in accordance with the essential areas and policies of the Accreditation Council for Continuing Medical Education (ACCME) through the joint sponsorship of the American Academy of Medical Acupuncture (AAMA) and the Georgia Association of Medical Acupuncturists (GAMA).  AAMA is accredited by the ACCME to provide continuing medical education for physicians.  AAMA designates this educational activity for a maximum of 14 hours in AMA PRA Category 1 Credit(s)TM .  Physicians should only claim credit commensurate with the extent of their participation in the activity.
